A Sunday Favorite: Banana Pancakes

This family recipe is loved by veg-people and non-veg people alike. These pancakes are so delicious that I just top them with bananas and cinnamon. No syrup necessary! Oh yea and they are gluten-free and wheat free as well!

Flaxseed Banana Pancakes

Cutting Pancakes-LARGE

Serves 2

Ingredients:

 

Directions:

  1. Create flax egg and let it sit for 10 minutes.
  2. Mix all ingredients, including flaxseed mixture, together in a medium to large bowl.
  3. Cook in additional coconut oil on electric skillet or pan over medium heat.
  4. Serve and enjoy!

    I didn’t use a pre-made mix so added a teaspoon of baking powder and 1/2 teaspoon of baking soda to 3/4 cup of spelt flour (not wheat/gluten free) and these turned out pretty good–might turn out lighter with more baking powder? (Still trying to perfect a light and fluffy vegan pancake) I also added a bit of vinegar to the almond milk since the ingredients for the Pamela’s mix has buttermilk powder in it, so if using the mix, it’s not entirely dairy free if that’s important to you.

    Tedi, I’m making these pancakes tomorrow morning! My grocery store didn’t have the Pamela’s baking mix that you used. I picked up Bob’s Red Mill Gluten Free All Purpose Baking Flour. Is that a good substitute?
