This massaged kale and avocado salad is savory, healthy and nourishing! I use lacinato kale, often referred to as dinosaur kale, as the base of the salad. To give this salad a savory flavor I top it with nutritional yeast and lemon pepper. I don’t know about you guys, but before I started eating a plant-based diet I had never heard of nutritional yeast. But once I adopted this new way of eating, I started seeing nutritional yeast in so many recipes. And that’s because nutritional yeast, which has a cheesy flavor, is often used in all those dairy-free “cheesy” dishes. And, it’s an excellent source of vitamin B12.I crave this salad all the time nowadays. However, if you had offered me this salad three years ago I never would have been interested it. But, now that I’ve been eating a plant-based diet for over two years, these are the sorts of foods my body craves. Whole, nourishing, nutrient-packed foods straight from the earth. And they taste so, so delicious to me. So if this doesn’t appeal to you yet, don’t fret. Our taste buds have the amazing capacity to change over time for the better.
And, for this recipe instead of dressing I massage the avocado right into the kale. Massaging kale helps to make it less bitter and tough. So get ready to get your hands a little dirty for this one! 😉
- 1 bunch dinosaur kale, de-stemmed
- 2 medium size tomatoes
- 1 avocado
- 2+ Tbps nutritional yeast (depends on how much you like the flavor…I like it a lot so I use a lot!)
- lemon pepper, to taste
- salt, to taste (I use pink Himalayan salt)
- De-stem kale and tear into small pieces. Place in medium size bowl.
- Slice tomatoes. Set aside.
- Cut and scoop out avocado, placing it on top of the kale. Massage it onto the kale with your hands so that all pieces are coated with the mashed avocado. Do this for about 5 minutes.
- Toss nutritional yeast, lemon pepper and salt onto kale and avocado. Mix together, trying to evenly disperse the seasoning throughout the salad.
- Transfer to a serving bowl. Top with tomatoes. Enjoy!
