I love love love this bean dip recipe. So simple and so flavorful. I make it all the time. This recipe is great to share with everyone. On this day I served the dip with tomatoes, cucumbers and Back to Nature Harvest Whole Wheat Crackers (they taste like all natural Triscuits!).
Serves 2-4
Ingredients:
- 1 cucumber, sliced
- 1 15 oz can cannellini beans
- 1 garlic clove, minced
- 2 Tbsp extra virgin olive oil
- juice of 1 fresh lemon
- red pepper flakes, to taste
- salt & pepper, to taste
Directions:
- Drain beans.
- Combine beans, minced garlic, olive oil and lemon juice in a food processor. Season with red pepper flakes, salt and pepper.
- Pulse food processor for a few seconds until smooth.
- Place in serving bowl. Garnish with more red pepper flakes, parsley & sliced cucumbers.
- Serve with crackers or veggies. Enjoy!
