I will admit that even in my head BBQs are synonymous with meat…so I had doubts about how great a plant-based BBQ could be. But I was absolutely proven wrong this past week in Montana!! I managed to have an amazing, 100% plant-based meal at…get this…an authentic western-style chuck wagon dinner! And a chuck wagon dinner is about as BBQ as a BBQ gets!
This dinner had it all…a true BBQ chef, picnic tables, campfires, an actual chuck wagon, a cowboy poet (yup! a real 5th generation cowboy who writes poetry about being a cowboy) and the roaring Blackfoot River as the backdrop. The chef was so accommodating and I absolutely had my mind blown by all the delicious plant-based foods you can make at a BBQ. I had so many options to eat and everything was amazing. Best meal of my trip by far.
I wanted to share this meal with all of you as inspiration for plant-based foods to make at your own BBQs! I know I will be making some of these at my own BBQs back home.
