I often hear from people that they want to try a plant-based diet, but don’t think they can give up their daily yogurt. Trust me, I used to be the same way…I thought dairy couldn’t possibly be that harmful so keeping it in my diet was no problem. However, once I really became educated on what’s in dairy, how it’s really made and the disturbing ways it affects human health, it was easy for me to give it up. Luckily, I have a super simple, super delicious and super healthy recipe to replace your morning yogurt: chia seed pudding! I am loving this recipe right now. Yesterday I had it for breakfast and as an afternoon snack. It is so easy to make and has just five ingredients: coconut milk, almond milk, chia seeds, agave nectar and fruit. The texture is different from yogurt because (obviously) it has seeds in it. So it might take a few bites to get used to it but once you do it’s so delicious and so much healthier than your usual dairy yogurt.
Chia seeds are a great way to start your day because they are so nutrient dense. They are a good source of fiber, antioxidants, omega-3s, protein, magnesium, calcium and iron. From just the chia seeds alone this recipe has 18.8 grams of protein!
Chia Seed Pudding
Serves 6-8
Ingredients:
- 1.5 cups unsweetened almond milk
- 1 cup full-fat canned coconut milk
- 4-5 tablespoons agave nectar
- 1/2 cup chia seeds
- fruit of choice (to garnish)
Directions:
- Combine almond milk, coconut milk and agave in a medium bowl. Stir.
- Add chia seeds. Stirring well.
- Place in an airtight container and let sit in the fridge overnight.
- When ready to serve, garnish with fruit of choice.
Cooking Tip:
- Canned coconut tends to separate so make sure you mix it well before adding to the recipe.
- This recipe makes an excellent dessert as well.
