Remember the Meatless Monday Challenge I posted last week? Well today I’ve got a recipe for these simple, delicious sandwiches that make for a perfect Meatless Monday lunch or dinner.Ingredients:
- Bread (I used Rye)
- Hummus (Or any other vegan spread. I used a vegan chopped “liver” spread on one piece.)
- Avocado
- Radishes
- Micro-greens
- Cayenne pepper
Directions:
- Spread hummus (or other vegan spread) on bread.
- Top with avocado, sliced radishes, micro-greens and cayenne.
Tips:
- Feel free to experiment and use any other veggies you have on hand…cucumbers, sprouts, tomatoes, red onion, etc.
- Use extra avocado as a side, top with cayenne like I did if you like it spicy. Add some fruit for another side and you’ve got a well-rounded fully plant-based meal.
