I hope everyone in the U.S. is having a wonderful holiday weekend! I have been back home in Minneapolis visiting my family, which means we’ve been doing lots and lots of grilling, while also visiting some of our favorite restaurants. Here’s some delicious plant-based food inspiration from Minneapolis. 🙂
Punch Neapolitan Pizza is one of my favorite pizza places in Minneapolis. I headed there twice during my time in MN. For my pizzas I just skip the cheese and load it with veggies. This time I had mushrooms, onions, arugula, artichoke and sun-dried tomatoes.
I also ate at French Meadow in Minneapolis. They have many vegan options including this very tasty blueberry corn pancake made with organic GMO-free corn, fresh blueberries and Wisconsin maple syrup.
At home I made mint chocolate chip nice cream. Nice cream is a vegan take on ice cream that’s nice to your body, because it’s made completely of natural ingredients and no processed sugars, and it’s nice to animals because it doesn’t use any dairy. In a high-powered blender I blended frozen bananas until it formed a smooth ice cream like texture. Then I threw in a few fresh mint leaves and a handful of cacao chips and blended for another minute or so until all the ingredients were well combined. It makes a sweet, healthy treat.
On more than one occasion my family and I grilled up our new family favorite, grilled avocados. I just drizzle with a tiny bit of olive oil and sprinkle with salt and pepper. It’s always a hit.
And of course one of summer’s best natural treats…lots and lots of watermelon!

Yum! All of this looks so delicious! I actually just ate a big bowl of watermelon – deeelicious! Now that I’m back in the Twin Cities (we just bought a house in St. Paul a month ago), I can’t wait to try all of the vegetarian/vegan restaurants here! We just ate at Seward Cafe a couple of days ago and I had the most delicious vegan pancakes with applesauce – yum!!!
