On the Menu this Week

August 22Good morning everyone! Something about farmers markets and the late summer air just go together for me. I’ve been exploring all different farmers markets around NYC and finding some of the most beautiful, fresh produce that the city has to offer. Sometimes the natural beauty of it all just takes my breath away! So in addition to some delicious dishes from around NYC, I’m also sharing some of the ripe, in season beauties I’ve been finding at the farmers markets. But first here’s some plant-based meal inspiration!

The raw falafel salad from Juice Press is savory, satisfying, so healthy and a complete source of protein. The falafels are made from almonds, sunflower seeds and buckwheat and they are served over a bed of kale with olives, cucumbers, tomato and red onion. These salads are pre-packaged and ready for you to enjoy a healthy lunch on the run!
WrapThis 5 spice marinated tofu shaobing wrap from Northern Tiger is SO good. The marinated tofu comes with a fresh veggie slaw inside the most delicious homemade flakey flatbread. If you’ve never tried tofu before this is a great place to start because it’s sure to please your taste buds!
Speaking of tofu, I cannot believe I’ve only just realized the amazingness that is Dig Inn and their grilled organic tofu with ginger. It absolutely blew my mind! (And p.s. I know you’re probably thinking, “oh those veg people and all their tofu…” but no! I don’t eat tofu that often at all. It’s a common misconception that if you don’t eat meat…you have to eat lots of tofu. Wrong! The fact that I had tofu twice in one week is unusual for me. I normally go months at a time without eating it.) But back to Dig Inn, Dig Inn is a farm-to-counter seasonal market serving locally sourced food at reasonable prices. I recently had the large veggie plate with the delicious grilled tofu with ginger, brown rice, grilled summer squash, a lentil, carrot and apple salad (which I’m also totally obsessed with), and a 1/2 of an avocado. Everything was so good.

Home cookin'Despite being out and about so much this summer I have made some simple home cooked meals. This number above is my new lunch favorite because it’s so delicious, nutritious, filling and easy to make. It’s pearled couscous with chopped tomatoes and sliced avocados. I topped the avocados and tomatoes with pink Himalayan salt, avocado and cumin.

Rainbow chardRainbow chard is in season right now too. It’s so beautiful! Nature is really pretty spectacular, isn’t it? I want to use it to make this recipe for sweet potato and chickpea stuffed rainbow chard rolls.
SungoldsAnd sungold tomatoes are so sweet right now. I’ve been eating them like candy! And what looks like mini watermelons are actually sour Mexican gherkin cucumbers. They’re crunchy, a little sour and tasty to snack on.
