One of my favorite ways to find meal inspiration is to visit my local farmers market, see what’s in season, and then search pinterest for recipes that use the ingredients I’ve found. So, now that it’s fall I wanted to share photos of some of the seasonal produce from my local farmers market along with some delicious recipes to go with them. Cooking with produce that is in season means it will be at its peak nutritional value, which is great for our health. Here are the 10 plant-based recipes to try this fall.
How cute are these mini bell peppers? Peppers have been in season the past couple months and they are still in season this month. I found a delicious looking recipe for paella-stuffed mini bell peppers. I would recommend leaving out the parmesan cheese to keep it totally plant-based.
Winter squash is in season now too and this recipe for roasted acorn squash + carmalized shallots with parsley oil looks pretty amazing.
In addition to eating apples raw, I also love to use local apples to make my recipe for homemade chunky applesauce. It’s sugar-free and so good. It will leave your whole house smelling like fall.
I love pumpkins for decoration but they would also be great in this recipe for pumpkin tortellini with brown mushrooms.
Sweet potatoes and regular potatoes are available year round and now I’m seeing purple potatoes too. They are a beautiful purple color on the inside and can be used in this savory recipe for colorful roasted potatoes with carrots & rosemary or this sweet recipe for vegan purple potato pie with coconut almond crust.
All sorts of beans are in season right now. The pink ones on the left are called cranberry beans aka borlotti beans and they look so good in this recipe for stewed cranberry beans with kale over mashed potatoes or polenta. And I’m craving this recipe for sichuan green beans too.
There are all sorts of root vegetables, like turnips and parsnips (seen above and below), at farmers markets in the fall. I like to use them in vegetables soups and I love the sound of this recipe for roasted garlic mashed turnips.
It is peak season for broccoli right now too so it is a great time to try out my recipe for broccoli squash soup. It’s the perfect soup to keep you cozy on a chilly fall day.
And of course there are beautiful fall flowers in season now too!
Other produce in peak season this fall includes pears, beets, cabbage, cranberries, persimmons, pomegranates, rutabagas, mushrooms, sage, brussels sprouts, figs and cauliflower.
