Ever wonder what vegan food is really like? Here are some highlights of my favorite things I’ve eaten this week. Hope you enjoy!
A new favorite is plant-based ice cream shop Koku. Koku just opened their first brick and mortar pop-up location here in Soho. This ice cream is dairy-free, allergen-free and refined sugar-free too. That means you don’t get a sugar rush, and then crash, after eating it. And since it’s dairy-free it also means no bloating, no stuffiness and no breakouts. It’s coconut based and so delicious.
Plus with its prime location, it will introduce so many people to dairy-free ice cream for the first time this year. It is sweetened with honey, so if you don’t eat that, skip this one. What you see in mine is toasted coconut butter ice cream on top, moringa mint chip on the bottom, and salted tahini caramel and peaches as my toppings. Heavenly! Their cones are also gluten-free and made of oat flour.
A new obsession of mine that I have made multiple times already this summer is this charred eggplant dish called caviar d’Aubergines. You cook the eggplant right on top of the stove flame until it’s cooked throughout and nice and smoky. Then you open it up and mix with tahini, olive oil, salt, crushed red pepper flakes and lemon juice. It’s so good! The recipe is from Bonberi and you can find it here.
If you want something tasty and really easy to make, this week I tried this Upton’s Naturals vegan ch’eesy bacon mac. It is so easy to make, literally just takes a few minutes to heat up, and tastes delish! I find it at Whole Foods, but I’ve seen it at lots of smaller health food stores too.
Now that it’s warm out I love getting as many of my fruits and veggies as I can from the farmers market. Here in NYC the biggest farmers market is the Union Square Green Market, and that’s where I found these freshly picked strawberries. They are so sweet!
And last but not least, I have a new favorite vegan butter and it’s this cashew based one by Miyoko’s. It tastes amazing and is so, so much better for us and easier on our bodies than dairy butter is. Trust me, just this on a piece of toast is perfection. I find it at Whole Foods and most health food stores.
