Massaging kale helps to make it less bitter and less tough. For this recipe I prefer lacinato kale, but any kind will do!

Massaged Kale & Avocado Salad

Ingredients
· 1 bunch kale, de-stemmed · 2 medium size tomatoes · 1 avocado · 2+ Tbps nutritional yeast (or more!) · lemon pepper, to taste · salt, to taste

Nutritional Yeast
Not to be confused with yeast for baking, nutritional yeast is often found in vegan recipes because of it's naturally cheesy flavor. It’s a great source of vitamin B12 too.

De-stem kale and tear into small pieces. Place in medium size bowl. Slice tomatoes, set tomatoes aside.

Cut and scoop out avocado, placing it on top of the kale. Massage it onto the kale with your hands so that all pieces are coated with the mashed avocado. Do this for about 5 minutes.

Toss nutritional yeast, lemon pepper and salt onto kale and avocado. Mix together, trying to evenly disperse the seasoning throughout the salad. Transfer to a serving bowl. Top with tomatoes.
