Tomato & Scallion English Muffins with Vegan Aioli

Ingredients

– 4 English muffins – 1/4 cup Vegan mayo  – 1 1/2 Tbsp dijon mustard – 1 Tbsp olive oil – 1/2 tsp dried oregano – 1/2 tsp salt – 1/2 cup grape tomatoes, sliced – 4 scallions, finely chopped

Prep Veggies

Half tomatoes and finely chopped scallions. Set aside.

NEXT STEP

Make the aioli

In a small dish whisk together Vegenaise, mustard, olive oil, oregano & salt to create aioli.

Spread aioli onto toasted English muffins. Top with tomatoes & scallions.
